My husband and I would normally go for vegetarian brunch on Saturdays at Parklin Vegetarian Food Stall.
Parklin Vegetarian Food Stall is run by a mother and son team. They serve a wide selection of tasty and economy vegetarian dishes including vegetarian Bak Kut Teh.
My hubby's favorite is fried noodles with chai char siew and deep fried oyster mushroom.

Mine is always brown rice (they offer white rice too) with the mixed vegetable (cabbage, long beans, potatoes and tau foo pok) curry and chai char siew.
Their vegetarian pig's trotter in vinegar is equally delicious.
